Lamb ribs on a cold spring day






My Sophia turned 14 on Friday. She is quite a young lady and inspires me everyday to be the best mom I can be for her. We celebrated by going to PugMahones (she picked the eatery) and eating Fish and Chips and listening to live Craic (traditional Irish music). We had a ball. We stayed over at a hotel in Billings and soaked in the hot tub too. On Saturday afternoon we all had our hair done! here are some pics of our wonderful evening.

today we have rested and done a lot of laundry. we lunched on chewy bread, pesto, brie, and manchego cheese around 2 while the lamb ribs were in the oven. the ribs were soooo good!

I took frozen lamb ribs (4 racks) and placed them in my LeCruset braiser pot. I sprinked them with course Kosher, fresh ground pepper, whole branches of rosemary and thyme. Lid on. In oven at 285 for about 4 hours. whoa, were they good.

Tomorrow is supposed to bring sunny weather in the 50's. I look forward to the first warm days of spring.
