What a great nite. Our nephew Ty John came to dinner and brought his girl friend Annie. She brought 2 fantastic salads. One had broccoli, cauliflower, and zucchini steamed...then chilled with a lemon vinagrette and parmesan cheese. The other was a salad with lettuce, avacado, peas from the garden, cucumber and more of the vinagrette. It went so well with the steak Justy grilled. I made crispy potato wedges with my sour cream and dill sauce. We also grilled elephant garlic and smeared it on our steaks. Vivian joined us for dinner. For dessert Isabelle really wanted a cherry pie....so....i made a double crust cherry pie and popped that into the oven.

grilled rib eye's
so much has happened since my last blog 9 days ago. this is also the longest stretch i have gone without blogging. summer is getting away from me!
i have made some really great food in the last week and a half...and so has my hunny. on my birthday my dear husband made ME a ribeye roast. he put it in the oven, in a cast iron skillet, frozen, at 275 degrees. (he took sophia to the orthodontist that day too.) he doctored it up with some spices. he is really good at spicing things up. :) my parents came out to the house for dinner too. my mom gave me a bag full of cheeses, breads, candles, and wine. does she know me or what! my dad gave me beautiful silver black hills gold earring in the shape of snowflakes! so pretty. and my dear husband gave me a le creuset braiser in turquoise!! yes!! i havent had this much attention since my 2nd birthday i am sure!! i also recieved flowers from my hunny, my mother in law viv, and my other mother ruthie. at work, the ladies i work with gave me a party with gifts and pie! honestly....i am one lucky girl. a few days later we headed to chico hot springs to meet up with travee and malissa. we soaked in the hot water friday nite and drank margeritas. the kids had so much fun. and my dear friend malissa gave me a super birthday present too! a pretty pendant from turkey, incence, earrings, and badger ointment! fabulous.
like i said...i am one lucky girl.
saturday we drove home. that nite i made grilled salmon with my pesto compound butter. it was sooo good. on sunday i pushed the easy button and made pork roast and potatoes. on tuesday i made burgers with balsamic vinegar fries. the fries were a hit with my kids. here's what i did:
1 shallot sauted in butter until tender and beginning to brown
balsamic vinegar to cover the bottom of the pan
cook until reduced by half
toss with oven baked homemade fries (the crispier the better)
course kosher salt and fresh ground pepper to taste
and tonite...grilled rib eye roast, salad from the garden with a lemon vinagrette, a roasted elephant garlic (soft and gooey) and yellow and green squash sauteed. the garlic smeared on the steak was mouth watering. i have tried uploading pics but am still having trouble with that....so no pictures. anyway, i will blog again soon. until then cook something tasty!
