breakfast for dinner: homemade hash



I was hungry for breakfast so that's what i made for dinner.

On St. Patrick's Day I made corned beef and had left overs. so i froze them in portions just right for making hash for breakfast. I had a couple of left over potatoes from dinner last nite. So tonite i sauted some onion, added my chopped up corned beef, and added the potatoes cut up. it was that easy! i then made some fried eggs over easy. i served it up with corn tortillas fried in oil and my homemade jalepeno green sauce. yum, yum!

then justy and is made chocolate chip peanut butter cookies...OMGosh. food makes life so wonderful! enjoy.

Lamb ribs on a cold spring day






My Sophia turned 14 on Friday. She is quite a young lady and inspires me everyday to be the best mom I can be for her. We celebrated by going to PugMahones (she picked the eatery) and eating Fish and Chips and listening to live Craic (traditional Irish music). We had a ball. We stayed over at a hotel in Billings and soaked in the hot tub too. On Saturday afternoon we all had our hair done! here are some pics of our wonderful evening.

today we have rested and done a lot of laundry. we lunched on chewy bread, pesto, brie, and manchego cheese around 2 while the lamb ribs were in the oven. the ribs were soooo good!

I took frozen lamb ribs (4 racks) and placed them in my LeCruset braiser pot. I sprinked them with course Kosher, fresh ground pepper, whole branches of rosemary and thyme. Lid on. In oven at 285 for about 4 hours. whoa, were they good.

Tomorrow is supposed to bring sunny weather in the 50's. I look forward to the first warm days of spring.

tamales











one nite this week sophia, isabelle, and i took on the daunting task of making tamales. we already had shredded pork from the freezer ready to use. it was left over from our branding last year when we cooked meat in the ground. it turned out so good. and we had a lot of left overs so we froze it.
we started by soaking the corn husks in water. meanwhile i made 2 batches of masa balls. you can find masa in your grocery store. it is ground up white corn. there is a recipe on the sack. take your masa make and divide it up into 2 inch balls. cover with a moist cloth. meanwhile take cooked shredded pork and place in skillet with a litte water. add a couple teaspoons of hand ground cumin seeds. sophia did this task. and add a couple teaspoons of chili powder also. simmer until the water is evaporated.
next take out one corn husk, place a masa ball on the husk with saran wrap on top. smash it down and use a rolling pin to flatten it and push it out to the edges. next place some meat on that. now fold the masa up into a little package using the corn husk. i have to tie my little packages with string. i have never had a lesson on making these...so i improvise and just do what works.
once you have all of them make place them in a basket over boiling water and cover. steam for one hour.
i served them with homemade green sauce, sour cream, and spanish rice. they were excellent and me and my girls had fun making them together. we missed not having bug with us. she was on a school trip for BPA. she is a busy girl.

t-bones, cobbler, and other delectibles...




tonite we grilled t-bones. we topped them off with buttermilk bluecheese under the broiler. we steamed broccoli and topped it with fresh squeezed lemon and kosher salt. mmm so good.


i threw in the picture of justy grillin' lamb chops from last nite. it had been snowing off and on all day. it was super cold out. but we HAD to grill the chops. i had also made a peach cobbler i proudly call 'schindler cobbler'


here is the recipe:
melt one stick of butter in a 2 qt casserole
in another bowl combine:
1 cup flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
whisk these ingredients together. pour into the melted butter. DO NOT STIR!
open one can of peaches and with a fork take one out at a time and plop onto the batter mixture.
place in preheated 350 oven for 45 minutes. and viola! the best cobbler!
