It's been awhile!  
5 nites ago I was in Laramie Wyoming watching Mumford and Sons at the Gryphon Theatre.  It was a fantastic experience.  We were in the second row.   Ted was gracious enough to stop and visit with the folks standing in line...were were at the front of the line....really.  Only 2 people were ahead of us.  We can't wait for another opportunity to see them.  Tonight I have been inspired to make time for blogging about the food I cook for my family.  It took the excitement and the energy from the concert to perk me up again after a long, hot, dry summer. 

Tonite I made kabobs using ground beef because I still dont have any lamb in the freezer although I am going to be getting one as soon as it's time for butcher.  I have posted the recipe for my lamb kabobs in a previous post.  I used the same recipe just switching out 1.5# of lamb with 2# of ground beef.  It turned out great.  The side I made with my garden grown grilled zucchini and tomatoes.  I made 1 cup of rice in the rice cooker and tossed it all together with the veggies.  This side was the star of the show though. Here's what I did: Make about 1 cup rice in rice steamer.  Then move onto zuchinni.  Wash zuchinni.  Slice into long flat strips.  Place in large bowl and drizzle with olive oil.  Season with salt and pepper.  Place on grill.  Leave on grill until tender turning once.  Once off grill chopped roughly and toss with rice.  Chop tomatoes and toss with rice and zuchinni.
