Stroganoff


yeah, its friday! i got off work at 4:30. i couldnt wait for my weekend to begin. we are branding this weekend. today justy and dad rode with the rest of the crew...to gather cows in preparation for tomorrow. i went to iga and bought some groceries. then i went to a little home town business that sells flowers each year. i bought a few more flowers for my deck to plant (will do that sunday). when i arrived home it was around 6 pm. isabelle had been home and was at grandma v's. soph and bug were at school playing in the band for graduation....which was tonite.


so tonite i made some develed eggs and beef stoganoff for dinner. my dad (who is staying with us during branding) thought it was delicious. i will post the recipe...but not tonite. tonite i am going to post a pumpkin bar recipe. i am making them tonite for tomorrow. i think this is a fantastic recipe. here it is:
4 eggs
1/2 tsp cloves
2 cups sugar
1/2 tsp nutmeg
1 cup oil
1 large can of pumpkin (30 oz)
2 1/2 cups flour
1 tsp soda
1/2 tsp cinnamon
mix all the ingredients together. pour into greased and floured jelly roll pan. you can also just line the bottom of the pan with parchment paper. pour mixture into pan and spread out with rubber spatula. bake at 350 degrees for 25 minutes.
frosting:
1 1/2 packages of cream cheese softened to room temp
1 stick of butter softened to room temp
1-2 cups powdered sugar
mix the ingredients with hand blender and whip until creamy. spread over cooled pumpkin bars.

  1. i have an excellent recipe for develed eggs that call for roasted jalepena peppers and cilantro. yum! i swear these entries make me wish i was there.
